9A- Testing the Hypothesis

A late night fast/healthy restaurant in Midtown.

Who: Although people know they should eat quality nutritious foods to stay in good health, some people just don't really seem to care about their diet or they simply just eat whatever they want to regardless of the foods nutrition. These individuals could be people of all ages, backgrounds and cultures so are simply just not into health and fitness. Other people might not like the idea because they believe cooking for themselves is a healthier better option because of this I conducted 5 interviews with individuals who do not fully support my opportunity belief.

Interview #1: Frank, 21 y/o

In this interview I asked Frank what he thought of my idea of opening a late night fast/healthy style restaurant in Midtown for people who are hungry after a night out could enjoy a tasty, affordable and healthy meal instead of being stick with your typical fast food. He responded by he does not believe that there is enough people who care about eating healthy after a night out from partying. He said it just does not seem realistic to him. I then asked him what foods do you think I could offer that would appeal to people, and he gave me suggestions such as turkey burgers and chicken sandwiches.

Interview #2: Julie, 48 y/o

In this interview I started off by asking Julie how often she ate out a week. She responded by telling me that she rarely ever eats out because she can never really know how much seasoning, salt, butter etc. people use while cooking. She is very health conscious and likes to weigh out all her food and for this simple reason she rarely goes out to eat because she is never able to accurately count her calories. I then asked her what if a restaurant provided customers with exact measurements of their ingredients would that persuade to go there,  and she said yes but she does not think a restaurant would do that as it would making the cooking process slower.

Interview #3: Sabrina, 20 y/o

This interview was randomly conducted at the recreation center. I asked Sabrina how often does she got out to eat and if she does where does she usually go to eat. She told me that she is not the biggest fan of eating out because it is never as cheap compared to just cooking for herself. She also mentioned that she just really enjoys cooking and just prefers the way her cooking tastes compared to the way the restaurants her cook.

Interview #4: David, 23 y/o

I introduced myself to David while I was waiting in line at chipotle, and I asked how often he comes to chipotle weekly. He told he comes to chipotle minimum twice a week because it is right next to his apartment so it is convenient for him. I asked him what he thought about my opportunity belief and he asked me if I planned to have it open 24/7 or simply late at night because both choices have major drawbacks. Being open 24/7 is costly and then only being open late at night I would lose a lot of potential customers during the day.

Interview #5: Melissa 19 y/o

I interviewed Melissa when I was waiting in the Starbucks line at Marston. I asked if she ever stays up late at night and if so how often does she ever want to order or go get food but does not like the limited options that are available. She told me she stays up late almost every night but she usually just get McDonalds menu because it is so cheap and fast. I told her my idea and she said there is no way I would be able to get college students who are struggling financially to spend more money on healthier options.

Inside the Boundary

Who is in- College students who care about health and fitness
What the need is- Providing the best quick and healthy meals late at night
Why the need exists- It exists because other restaurants are not open past 11pm

Outside the Boundary

Who is not- People who either like to save money by cooking or people who don't care to eat healthy
What the need is not- The need is not to convince people to eat healthy or to compete with fast food restaurants
Alternative Explanations- People are already accustomed to going to certain restaurants they already trust so they would not explore a new option

  1. David,
I enjoyed reading all of your interviews that you conducted. One thing that I saw was that you had a diverse group of people you interviewed and that is essential because Gainesville is more than just a college town. I hope to see this restaurant in the near future, because lord knows I need it.

I think it is very important to interview all different groups of people to get the widest variety of answers. That is exactly what you did. You got results from a good, diverse group of people that I think will help strengthen your opportunity.

  3. Hey David, I think you led the interviews really well and got a lot opinions from a diverse group of people. I think they really shed light on some issues you had with your customer base and helped you think of aspects of the restaurant that you might not have thought about to begin with. I think they made some important points that you can now try and find solutions for.
